I enjoy cooking , I like to read a lot about cooking since we don’t have a lot of time to cook these days… maybe when the kids are bigger and can be little sous-chefs…
This article in the Seattle times reminded me of how simple steps and techniques can result in delicious meals.
I also subscribe to Cook’s Illustrated magazine because it presents the recipes in way that really appeals to me. Each article has a goal, for example ‘crispy skinned lemon chicken’. They also set limits, such as time limits, complexity limits, ingredient limits. Next follows a survey of recipes to find a starting point. Then the author makes changes to the recipe and explains the effect those changes had in terms of the goal.
At the end of the article a ‘master’ recipe is presented. So by reading the article before the recipe you gain some understanding of the role each ingredient plays in the result, and how you could tweak the recipe to suit your own desires.
Made this Chickpea Curry for supper tonight, mmmm good. Also made a spinach/tomato curry as well, all served over basmati rice.
